
This month's Barefoot Blogger recipe is a delicious, refreshing summer cocktail. It was chosen by Veronica of Supermarket Serenade. I have given you Ina's exact recipe, and at the bottom, noted the changes I made to the original recipe.

Mango Banana Daiquiris
serves 4
2 cups chopped ripe mango (1 to 2 mangos, peeled and seeded)
1 ripe banana, chopped
1/2 cup fresh squeezed lime juice (4 limes)
1/4 cup sugar syrup*
1 1/4 cups dark rum, such as Mount Gay
Mango slices, for serving
Place the mango, banana, lime juice, sugar syrup, and rum in a blender and process until smooth. Add 2 cups of ice and process again until smooth and thick. Serve ice-cold in highball glasses with the mango slices.
*To make simple syrup, heat 1 cup sugar and 1 cup water in a small saucepan until the sugar dissolves. Chill.
MY NOTES: I was in super lazy mode when I made myself this cocktail. I was home alone, so I was only preparing it for one person. Luckily, I was able to use my handy, dandy Magic Bullet! Instead of fresh mangos, I used Dole Orange-Peach-Mango Juice, which is pretty sweet, so I didn't bother with the simple syrup. I poured a little Dole juice into the glass of the Magic Bullet, followed by one small, over ripe banana, a small shot of Meyers dark rum, a squirt from half of a lime, and finished by filling the rest of the Magic Bullet cup with ice. I blended for a minute and poured into a glass. It was so yummy! Too yummy! I knew I could make cocktails in the Magic Bullet, but this took less than one minute! I could see myself doing this every night! I would definitely make this cocktail for friends and family who like daiquiris.

I thought I was garnishing my drink with mint, but when I tasted the drink, I found out it was NOT mint. I still am not sure what I grabbed from our garden. Oopps! Tell me that drink does not look icy, sweet, fruity and refreshing!
