This is Jamie and Joey's FAVORITE appetizer! It is definitely in my top 10 (along with nachos, potato skins, mozzarella sticks....any cheesy bar food!). Atlanta folks will recognize this dish as a copycat of the famous, iconic, appetizer from Buckhead Diner. I happen to think this version is just as good as theirs (sorry Pano!). It is always a huge crowd pleaser, and no matter how big of a platter I make, it is gone by the end of the night. I swear, I have seen people practically lick the bottom of the dish when these chips are gone!
Maytag Blue Cheese Chips

These are your 3 ingredients:
1 bag Kettle Cook Cape Cod potato chips
8 oz. blue cheese, crumbled*
1 jar Marie's blue cheese dressing
*The original recipe calls for Maytag blue cheese, which is a brand of blue cheese that comes from the Maytag Dairy farm in Iowa. Maytag Dairy use local cow's milk, instead of sheep or goat milk (typically used to make blue cheese), and is considered by some to be one of the finest blue cheeses available. It is not necessary in this recipe to have Maytag blue cheese.
Preheat oven to 375. Spray a 9 X 13 baking dish with Pam. Spread a single layer of chips into the pan.

Drizzle half of the bottle of the blue cheese dressing evenly over the chips with a spoon.

Sprinkle half of the blue cheese crumbles over the dressed chips. Repeat with another layer of chips, dressing and blue cheese.

Bake in the oven for about 15 minutes until the edges of the chips begin to brown and the cheese is melted and bubbly.

How easy is this appetizer?!?!??!
This is what your dish will look like in about 15 minutes:

That is one layer left, in one corner, after only four people ate this 9 X 13 dish!
