
This was an incredibly easy side dish from my new favorite Food Network show, Five Ingredient Fix. We take a very healthy green bean, and turn it into a decadent side dish. Brilliant! It is delicious, quick to make, and beautiful to look at. I cannot imagine who wouldn't like this dish!
Nutty Greens with Bacon and Blue Cheese

kosher salt, to taste
1 # haricot verts, trimmed
3 slices bacon
4 oz. blue cheese, cut into small chunks (recommended: Shropshire*)
1 1/2c. toasted whole pecans, coarsely chopped
freshly ground pepper
*Shopshire blue cheese is a very mild, English, blue cheese that is available at Whole foods. You can recognize it from its orange color.


Bring a large pot of salted water to a boil over high heat. Add the haircot verts and cook for 2 minutes. Remove the beans from the water and immediately place in a bowl of ice water. Remove the beans from the ice water and set aside.
In a large saute pan, over medium heat, cook the bacon until crisp. Remove the bacon and place on paper towels. Add the beans to the bacon drippings and cook over medium heat for 2 - 3 minutes.

Add the blue cheese and toss just until it starts to melt. Break the cooked bacon into bite-sized pieces and add to pan. Finish by stirring in toasted pecans. Season with pepper and just a dash of kosher salt.
Serve right away.
