If you like La Madeline's Tomato-Basil Soup, you will love this soup. It is a "copycat" recipe, which are recipes that are supposed to replicate a much loved restaurant dishes. On a scale of 1 to 10, with 10 being an exact copy of La Madeline's version, this is a 7.5. Don't get me wrong, this is a delicious bowl of creamy, tomato soup, but there is something missing. Maybe La Madeline uses special tomatoes, or they have a variety of basil that no one knows about, but there is something different about this soup. I have tried tweaking it, but it never comes out quite the way I hope it will. Oh well. It is still delicious and easy to make.
UPDATE: Day 2 of my fitness challenge - walk around the mall, then took dogs for a 20 minute walk.
